We know that many of our customers prefer to purchase beef in bulk quantities to have in their freezer to use anytime.  Buying beef in bulk can be intimidating if you have never done it before. By purchasing a whole, half or quarter of beef, you get to decide how the beef is cut and packaged, according to your family’s tastes and needs. If this is your first time or you are an old pro at ordering bulk beef off the farm, we are here to help you through the process.

We use Johnsons Sausage Shoppe in Rio, Wisconsin for custom butchering. In addition to the price of the meat, you will also pay for processing your beef.

We make this a separate charge because Johnson’s Sausage Shoppe offers several value-added options that you may want to take advantage of such as Hamburger Patties, Beef Sticks (in various flavors), Hotdogs, Dry Beef, Beef Jerky, etc. All of these options incur an extra cost / pound, but if you like the convenience and flavor of these cuts, the extra cost is worth it.          

Their basic processing costs are as follows:          

           Kill fee                               $22 (quarter), $40 (half), $75 (whole beef)      

          Cut, vac-pack, and freeze     $.55 / lb.      

It might sound overwhelming at first, but we or the staff at Johnson’s Sausage Shoppe will be happy to help walk you through the process.

Why are deposits required?

Non-refundable deposits are required at the time of reserving your whole, half or quarter beef order.  We only have a limited number of beef available for quarters and halves each year, therefore to make sure have enough available we require a deposit when ordering.  The deposit will be deducted from your final balance due when the beef goes to the butcher. 

How much does the beef weigh?

We would estimate that the hanging weight for a quarter would range from 150-220 lbs and a half 325-440.  These are estimates, as each animal grows at a different weight therefore the weight at time of processing will vary per animal.  You will receive a final weight and balance due when the beef is processed.  The balance due to us will be the $2.50/lb x hanging weight.  Your deposit will be deducted from this total due.  The processing fee will be paid directly to Johnson’s Sausage Shoppe when you pick up your beef.

How much beef will I take home?

The amount of beef you will take home will be less than the hanging weight and will vary based on how which cuts are chosen and much bone are left in the cuts you select.

When will the Beef be ready?

We are currently taking reservations for 2018 beef orders.  The beef will be ready in late summer/early fall.  Why can’t we give an exact date?  Cattle, just like humans, grow at different rates, therefore predicting an exact date they will be ready for market at this time is hard to do.  As we approach the end of summer, we will be able to give you a closer estimate of when you can expect your beef. 

Picking up your beef?

We will notify you when we take your beef into the butcher to be processed.  At that time you will need to contact Johnson’s Sausage Shoppe with your cutting specifications.  The beef will age for approximately 2 weeks after slaughter.  When your beef is cut and packaged, you will receive a phone call from Johnson’s Sausage Shoppe notifying you that your beef is ready for pick up.  You can pick up your beef at their location: 416 State Road 16, Rio, Wisconsin 53960.
