When Kenny and I got married, we were blessed with a few different wedding showers.  At each shower guests gave us a recipe card or two with their favorite recipes.  The book is well worn and we have tested many of them many times.  Today I am sharing with you one that was passed on to me by my Godmother.  This recipe is super simple and can help you get dinner on the table in less than 30 minutes from ingredients to plate.  We serve them with a salad and quick homemade refried beans.  Homemade meals don't have to be hard!

This recipe can easily be doubled or tripled and refrigerated and is perfect for prep ahead meals.  Just pull them out of the refrigerator and warm up.

Taco Tarts

1 pound Wells Farms Ground Beef
2 ounces black olives, chopped (if desired)
1 cup tortilla chips, crushed
1/2 cup shredded cheddar cheese
2 Tablespoons taco seasoning
2 Tablespoons water
1 cup sour cream
2 Tablespoons salsa
Mix ground beef, taco seasoning, and water.  Press mixture onto the bottom and sides of cups of a mini muffin pan to form a meat shell.  
Combine sour cream, salsa, olives and 3/4 cup of the chips. Spoon mixture into the meat shells. 
Combine the remaining chips and cheese.  Sprinkle on top of the tarts.
Bake at 375° for 10 minutes.  Remove and drain on paper towels if needed.
Reheat leftovers in the microwave on a paper-towel lined plate 
*Bonus Recipe - Easy Refried Beans

 

1 Tablespoons olive oil
1/2 teaspoon minced garlic
1 can black beans
In a sauce pan add the olive oil and garlic.  Cook for a minute or two until garlic is fragrant but not overly browned. Add the undrained beans to the pot.  Cook on medium and mash while cooking.  Cook until liquid has reduced and the beans are heated through.
