Split Pea Soup
3 Carrots (1 1/2 cups), diced
4 Stalks Celery (1 cup), diced
1 Onion (1 1/2 cups), diced
5 cups Chicken Broth
1 bag (16 oz) Dry Split Peas, rinsed
1 Wells Farms Smoked Hock
2 cloves Garlic, minced
1 Bay Leaf
1/2 tsp Black Pepper
1 tsp Thyme
Add all ingredients to a slow cooker and cook on low for 8-10 hours. Pull meat apart and remove bones, fat, and bay leaf. Serve with crusty bread.
