You all loved Sample Saturdays in 2019 so we brought them back for 2020!  Sample Saturday happens the first Saturday of every month at the Sun Prairie Farmers Market, so come join us to try various cuts of Wells Farms Beef prepared in a variety of ways.  The first samples of 2020 we served up used our beef shanks (often called beef soup bones) slow cooked and shredded with a delicious Salisbury style gravy served over mashed potatoes.  We look forward to seeing you at our next Sample Saturday!

Salisbury Style Gravy with Beef Shanks

 

Ingredients:
1 Packet Lipton Beefy Onion Soup Mix
1 onion - chopped
1 cup Beef Stock
1 tablespoon Ketchup
1 teaspoon Dry Mustard 
1 teaspoon Worcestershire Sauce 
4 teaspoons Corn Starch
4 teaspoons Juice from Cooked Beef

In your slow cooker place the beef shanks on the bottom and sprinkle with the packet of soup mix and chopped onion. Pour the beef stock on top of the beef shanks.  Set slow cooker to low for 8 hours. 

Remove the cooking liquid from the slow cooker and put in a sauce pan.  At this point you can skim off the fat from the sauce and discard.  Add the ketchup, dry mustard, and Worcestershire sauce and whisk together.  In a small bowl create a corn starch slurry by putting the corn starch in the bowl and then slowly adding some of the liquid from your sauce pan.  Mix together and add back into the sauce pan.  (Adding the corn starch to the liquid in the pan will cause the corn starch to clump and won't mix into the sauce).  This corn starch slurry will help to thicken your gravy.  Remove the bones from the beef shanks and shredded beef.  Add the thickened gravy back into the slow cooker with the meat and mix well.  Season to taste with salt and pepper. 

Serve over mashed potatoes with a steamed vegetable and a side salad for a total comfort food dinner. Enjoy!
