This was a recipe that I threw together rather quickly after coming home from one of our girls' basketball games. It came together pretty quickly and using the frozen veggies saved prep time.
1 package (4-5 brats) Italian Sausages (brat style in casings)
2 Tbsp Olive Oil
1 bag Green Giant Veggie Spiral Skillets Marinara Flavor (this was zucchini spirals, carrots, and yellow bell pepper in a zesty tomato sauce)
1/2 of 1lb box Orzo pasta, cooked according to package directions
1/4 cup Marinara
I first boiled the brats in water (I boiled them from frozen because I hadn't thawed them ahead of time). I like to boil them first in order to ensure they are cooked all the way through.
Slice the brats into bite sized pieces and fry in a deep skillet with a little olive oil until they begin to brown and then remove from pan.
While the Italian sausage pieces are browning, cook the Orzo according to package directions.
Add the frozen veggies from the bag to the skillet. Cook on medium heat with the lid on, stirring occasionally.
Once the veggies are warmed, stir in the Italian sausages and add the cooked and drained pasta. Stir together. Add 1/4 (or more if desired) jarred marinara sauce.
