Cilantro Lime Corn Salad

This Cilantro Lime Corn Salad is the perfect blend of many summer staples with the bright and fresh taste of lime from lime flavored olive oil. This is a recipe developed for The Oilerie in Sun Prairie, Wisconsin to showcase their lime flavored olive oil. 

Ingredients:

2 Tbsp Oilerie Fior Fior Olive Oil 

3-4 cups Fresh or Frozen Sweet Corn

3/4 Bell Pepper, chopped

1/2 Red Onion, chopped

1 Jalapeno, diced (can add more to your taste)

2 Tbsp Fresh Cilantro, chopped + some for topping

2-3 Tbsp Oilerie Lime flavored Olive Oil  

 

Add the Fior Fior olive oil to a pan and set on medium heat.  

Add the corn and diced bell pepper, onion, and jalapeno to the heated pan.  

Cook until the corn becomes a golden brown.

Transfer to a bowl.  

Add the lime olive oil and cilantro and stir.

Top with a drizzle of lime olive oil and a little cilantro.

This salad can be served warm or cold, as a stand alone dish or as a topping for tacos, fajitas, or carnitas.
