Beef Shanks/Soup Bones


I always say that this is a totally underestimated cut of beef!! So many possibilities and ways to use them.

 
About:
Crosscut Beef Shanks or also known as Soup Bones are a portion of the leg. With this area being used extensively for movement which lends these crosscut sections best for braised dishes, like Osso Buco or for beef stock and soups.

Shredded Beef Lettuce Wraps

Ingredients:


3 (approx. 3-4 lbs) Wells Farms Beef Shanks/Soup Bones

3/4 cup Low Sodium Soy Sauce

1/4 cup Honey

3 TBSP Sweet Chili Sauce (plus more for topping)

1 TBSP Rice Vinegar

1 TBSP Toasted Sesame Oil

1 TBSP Fresh Ginger

1 TBSP Minced Garlic

 


Add towards end:

2 TBSP Corn Starch

2 TBSP Water

 


Toppings:

1 cup cooked rice

1 Bell Pepper (thinly sliced for topping) - I used the mini peppers.

2-5 Radishes (cut into match sticks for topping)

1/2 cup Carrots (cut into match sticks for topping)

Bibb Lettuce Leaves

 


1. Turn on slow cooker to low.

2. Place the soy sauce, honey, sweet chili sauce, rice vinegar, sesame oil, ginger, and garlic in the slow cooker and stir until combined.

3. Add the beef shanks to the slow cooker and sauce mixture.

4. Cook on low for 8 hours

5. When the shanks are easily falling apart, remove to a bowl and shred the meat, removing the bones and any extra fat. 

6. In a small bowl add the corn starch.  To the corn starch add the water and mix thoroughly.  

7. Turn the slow cooker to high and add the corn starch slurry to the sauce left in the slow cooker and mix.

8. Once the sauce starts to thicken, add the shredded meat back to the sauce and mix well.

9. Wash and separate the lettuce into individual leaves.

10. Top the lettuce leaves with rice, shredded meat, vegetables (carrots, peppers, radish), drizzle with sweet chili sauce and sprinkle with sesame seeds if desired.

11. We served ours with an Asian Cucumber Salad (recipe below) and store-bought cream cheese wontons. Enjoy!
