Week #4 - Smothered Italian Sausages

Italian Sausage Brats
 
About:
Sausage is seasoned ground pork and comes from a variety of pork cuts - can include hams, loin, butt, shoulder, etc. These Italian flavored brats are Italian sausage in a casing. They are great to grill up and eat on a bun with peppers and onions or add to your favorite pasta dishes.  When cooking sausage, cook to an internal temperature of 160° F to ensure doneness.
 
Optimal Cooking Methods:
Grilling, Roasting, Sautéing, and Stewing.

Recipe:

Smothered Italian Sausages 

1 pkg (4 Brats) Wells Farms Italian Sausages

1-2 Tbsp Olive Oil

1 Yellow Bell Pepper, cut in strips

1 Red Bell Pepper, cut in strips

1 Green Bell Pepper, cut in strips

1 Onion, cut in strips

8 oz mushrooms, sliced

2 tsp Garlic, minced 

2 tsp basil

2 tsp oregano

2 Tbsp tomato paste

Fresh mozzarella

 

Instructions:

Preheat Oven to 350 degrees.

1. Cut open Italian Sausages so they lay flat.  (Butterfly the sausages)

2.Heat a cast iron skillet over medium-high heat and add the 1-2 Tbsp of olive oil.

3. Add the sausages to the pan and cook until browned on each side.  Remove to a foil lined baking tray.

4. Using the same cast iron pan, turn the heat to medium and add the peppers and onions to the pan.

5. Cook peppers and onions until the start to turn soft.  Add the mushrooms to the pan.

6. After the mushrooms have cooked add the remaining ingredients - garlic, seasoning and tomato paste and stir.

7. Top the sausages with the pepper mixture and then add mozzarella cheese to top of the peppers.

8. Bake in the oven for 10-15 minutes, until the cheese is melted

9. Serve warm
