This is a recipe that we have come to love in our family but for different reasons. The girls will never turn down a dish with pasta, so that's why they love it. I love it because it's a one-pot dish that comes together quickly. Less mess and quick dinner plus one that is really tasty too - is always a winner in my book.

One Pot Sausage & Tortellini
Ingredients
- 1 lb Wells Farms Italian Sausage
- 3 tsp minced garlic
- 1 tsp dried basil
- 1 - 14.5 oz can petite diced tomatoes
- 1 1/2 cups chicken broth
- 1/2 cup heavy cream
- 12 oz bag dried 3 cheese tortellini
- 2 cups (or more if desired) fresh spinach
- salt & pepper, to taste
- fresh shredded Parmesan
Directions:
- Brown the ground sausage in a deep sided skillet
- Add the garlic, basil, tomatoes, chicken broth, cream and tortellini to the skillet. Cooking for approximately 15-20 minutes, until the tortellini is cooked, and sauce reduces. If the sauce reduces too much you can always add more chicken broth to your liking.
- Stir in the spinach and let it wilt. Season to taste with salt and pepper. Shred fresh parmesan over the top and serve warm.
