One Pot Sausage & Tortellini

This is a recipe that we have come to love in our family but for different reasons.  The girls will never turn down a dish with pasta, so that's why they love it.  I love it because it's a one-pot dish that comes together quickly.  Less mess and quick dinner plus one that is really tasty too - is always a winner in my book.

One Pot Sausage & Tortellini

Ingredients

  • 1 lb Wells Farms Italian Sausage
  • 3 tsp minced garlic
  • 1 tsp dried basil
  • 1 - 14.5 oz can petite diced tomatoes
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 12 oz bag dried 3 cheese tortellini
  • 2 cups (or more if desired) fresh spinach
  • salt & pepper, to taste
  • fresh shredded Parmesan

Directions:

  1. Brown the ground sausage in a deep sided skillet
  2. Add the garlic, basil, tomatoes, chicken broth, cream and tortellini to the skillet.  Cooking for approximately 15-20 minutes, until the tortellini is cooked, and sauce reduces.  If the sauce reduces too much you can always add more chicken broth to your liking.
  3. Stir in the spinach and let it wilt.  Season to taste with salt and pepper.  Shred fresh parmesan over the top and serve warm.
