Cilantro Citrus Carnitas

 

 


Ingredients

2-3 lb Wells Farms Pork Shoulder Roast
1 cup Orange Juice
1/2 bottle Cilantro Lime Marinade (I used the Simple Truth Brand from Pick n Save)**

1 can Black Beans
1 tsp Cumin
1 tsp Smoked Paprika

Guacamole

Sweet Corn off the cob

Queso Fresco or Feta Cheese

Fresh Cilantro

Corn Tortillas or Tostada shells


Directions:

Place the roast in a slow cooker with the 1/2 bottle marinade and orange juice. Set on low for 8 hours.

In a small sauce pan add the can of beans with the cumin and paprika. Heat until warm and then mash with a potato masher or fork.

In a skillet add the corn with a little butter or oil. Stir occasionally to get an even browning on the corn.

Fry the corn tortillas in oil until crisp or you can use tostada shells from the grocery store that are already fried.

Assemble the tostadas in layers - tortilla, beans, guacamole, shredded pork, corn, cheese, cilantro and drizzle some of the remaining marinade from the bottle of cilantro lime marinade. Enjoy!
