As soon as the weather starts to turn slightly cooler or when college football kicks off, whichever comes first, I always find myself craving a big bowl of chili with all the toppings.  I am not exactly sure how I came across this chili recipe but oh boy, I am so glad I did!  It is seriously my favorite chili I have ever tasted, it's got all the things - it's sweet, it's smokey,  and it's a little spicy.  The trifecta of tastes!

I served this up earlier this year and it got 3 out of 4 thumbs up from the family. (Kenny prefers a classic, less sweet chili but still thought this was a good alternative to traditional chili to change it up once and a while.)  After loving it myself, I thought I would put it to the test and enter it in a local chili cookoff at Cannery Wine & Spirits during the Downtown Sun Prairie Fall Festival.  Mind you, I have never entered a chili competition before, this chili was just so good that I felt I couldn't keep it all to myself!  And guess what? It was the WINNER!!

Game Day Chili

*Recipe adapted from Iowa Girl Eats

  • 1lb Wells Farms Ground Beef
  • 1 large onion
  • 1 grilled zucchini, diced
  • 2 cloves garlic, minced
  • Salt and Pepper
  • 2 (15 oz) cans tomato sauce
  • 15 oz can Bush's Vegetarian Baked Beans
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can great northern beans
  • 3 Tbsp chili powder
  • 2 Tbsp Brown Sugar
  • 2 tsp smoked paprika
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper (you may adjust this by adding more or less to your taste)
  • 1 cup beef broth
  • Toppings for chili if desired - crushed tortilla chips, shredded sharp cheddar cheese, green onions, sour cream, etc.

Directions:

Brown ground beef with diced onion and garlic in a dutch oven or stockpot medium heat.  Add salt and pepper to taste while browning. 

While beef is browning slice zucchini in long slices and grill or roast in the oven until slices are charred.  Cool slightly and then dice.

Once beef is browned add zucchini, drained and rinsed beans, and remaining ingredients.  Simmer for 20-30 minutes, stirring occasionally. Enjoy!
